We also work in partnership with our other brands which operate the summer programmes. We are seeking highly motivated and experienced Head Chefs to work in our Club Hotels in France. The property is set in a stunning location and attracts guests with the highest expectations from their ski holiday. We are looking for creative and talented Head Chefs; offering the freedom to inject new ideas and personality into the menus using the best, fresh ingredients. With at least 2 years experience in a similar role or be ready to take the next step in your career having a proven track record in a high capacity, high standard environment, you will be responsible for high levels of Health & Safety and Hygiene control throughout your department meeting all HACCAP requirements. As Head chef you will lead your team from the front, delivering staff training and ongoing development ensuring you exceed our guest expectations from the catering service team. Excellent food cost controls are essential. You will work alongside the Hotel Manager but will be given ongoing support from the Area Hotel Manager and Catering Manager to help you achieve and exceed your targets. - Supervise overall menu planning and costing, preps and mise en place for efficient service, follow HACCP rules.
- Purchase of all food and cleaning items from recommended suppliers working to company budget.
- Training new staff, hygiene, general grooming of the team. Ensure nutritious staff meals available for staff.
- Order necessary products, stock rotation, cleanliness of fridges etc, monitor deliveries. Keep accurate and timely accounts to adhere to weekly/seasonal budgets.
- With other chefs, Kitchen Porters, Hotel Manager and Assistant Hotel Manager.
- Quality of preparation and presentation, speed of service.
- Produce and cost menus for a 14 day period, bring ideas for new dishes. Supply ideas for incremental sale menu, provide improvements and changes for dishes not selling.
- Ensure that all food hygiene and safety standards are adhered to the kitchen / food storage / food preparation and serving areas. Completing H&S and cleanliness checks.
Head Chef – France - Skills / Experience: - Work well under pressure
- Extensive restaurant/tour operation experience
- NVQ level
- High level of cooking Skills
- Highly motivated and organised individual
- Team communication
- Excellent knowledge of H & S, HACCP and Food Hygiene regulations
- Good understanding of both kitchen and bar snack operations
- Equipment knowledge
