Ski France Chef –

We are looking for bright, hard working and organised individuals to join the Ski France team to help run our chalets in the French Alps and give our guests the best holidays we can. 

Summary of Ski France Offer –

This was a new concept in 2021-22 to replace the traditional catered chalet holidays that are so popular with the Brits.  It is primarily aimed at the British market but the same chalets will still be sold to the French market on a self catered basis.

The chalets will be ready on arrival with beds made, fridges stocked, ski equipment booked and lift passes delivered. We prepare everything behind the scenes so the guests don’t see us but we’ll be a phone call away for anything they need.  We will be providing them with the best possible service.

At point of booking, the guests will decide if they want the ‘contactless catered’ option or the ‘a la carte’ option.

Contactless catered consists of breakfast, afternoon tea and 3 course dinner provided.  Most meals are already cooked (eg beef bourgignon) and just need to be heated in oven/on hob.  Some simple dishes need to be prepared (eg goat’s cheese salad starter).  Premium chalets get a few extra touches compared to the classic chalets (eg smoked salmon for breakfasts/champagne on first night).

A la carte – guests are provided with a checklist of things that we will purchase on their behalf from the supermarket.  We do a big pre-arrival shop for them and can restock mid week.  They can choose what they like and this is billed to them at the end of the week.

French guests are currently offered the self catered option but in the same chalets – they get clean chalet with beds made and welcome basket.

The Second Chef works alongside the Head chef ensuring that the guests' needs are met at all times while maintaining the Company's standards. The chef's primary responsibility is for the provision of fantastic home style cooking.


Previous Experience

Applicants should demonstrate at least 1-2 years experience in professional kitchens of restaurants /cafés/pubs or have catering experience for events/weddings etc.

Good knowledge of cooking for clients with allergies/dietary requirements

French language skills are not essential but it does help

Good communication and team working skills are essential.

Excellent organisation


Main Duties

Cooking -

afternoon tea biscuits/cakes/brownies

simple starters, eg soups/tarts/salads

main course of delicious, hearty food, eg slow roasted lamb, coq au vin, tartiflette, dauphinoise potatoes, mash

puddings such as tray bakes/crumbles

Simple kids’ dinners e.g lasagne, chicken goujons and wedges etc.

 6 days per week. Caters for any special diets as required (e.g., vegetarian, gluten free etc.)

NB some of the afternoon tea and puddings can be bought in ready made. 

Dishing up the meals neatly into recyclable containers for correct number of guests per chalet, the guests will then heat up themselves.

Date labelling and labelling the dishes to ensure they go to correct chalets

Helping logistics assistant with preparation of breakfast baskets

Could be preparing up to 150-200 meals per day in peak weeks

Catering for special events, eg Christmas, New Year’s Eve

Cooking for staff – 20 ish per day (they can eat same as the guest meals to keep it simple)

Administration -

Maintain a record of all dinner menus and afternoon tea dishes and submits these weekly as required

Management of stocks of all items/requirements, ordering of food, performs stock takes as requested, explains any exceptional usage as requested.  Ensures that all variable costs are kept within budgeted levels

Ensures that fridge and freezer temperatures are maintained at a safe level for the storage and preservation of food; reports any issues immediately

Reports any maintenance/repair issues promptly

Ensuring kitchen and prep area kept spotless at all times

Adhering to health and safety regulations at all times
