Staying in a ski chalet has traditionally meant lavish cooked breakfasts every morning, piles of freshly baked cakes every afternoon and monster five-course meals every evening. But this is beginning to change as the smartest chalets in the Alps are increasingly offering lighter menu options, fewer courses and more chef's nights off.
