Black Diamond Lodge

Black Diamond Lodge offers our one week residential Chalet Cookery Course in Ste Foy, French Alps. Our course is held in actual chalet kitchens. We believe that chalet cookery and operations training in the Alps provides our students with the skills they need to work hard, play hard and enjoy an unforgettable ski season.

We have designed our week long course to mimic working a winter season, allowing you to fully understand the structure of a typical working day. In addition to cookery, we use the chalet environment to teach you critical chalet operation techniques you will need to work as a successful chalet host or chef. Five full days of cookery and chalet operations training with afternoon free time each day to enjoy Alpine activities including walking, cycling, white water sports or simply relaxing in our spa.

The Old Rectory Cookery School

If you want to gain the skills necessary to find a job in your gap year, working as a ski chalet chef, then this course is for you. Our popular Essential Course is also designed for anyone who is thinking of a career in catering, perhaps running a pub, hotel or B&B, or maybe you just want to learn how to cook. This two-week hands on course covers key skills for competent cookery. Starting with basic knife skills and simple dishes, these busy cookery classes will show you much more than just the classic methods for stocks, sauces and pastry. New ingredients will be explored; tips on stylish presentation will be learnt along with guidelines for balanced menu planning, hints on preparing ahead and good kitchen organisation. At the end of the course you will have a good range of culinary skills and confidence to tackle any recipe. The essential course is designed for any enthusiastic person who wants to immerse themselves in cookery with like minded individuals to widen their repertoire and improve their skill level. With our small classes of a maximum of 8 students you will have lots of individual attention. Situated in the village of Bentley on the Surrey/Hampshire borders, about 40 miles from London.

The Orchards School of Cookery

The Orchards School of Cookery specialises in training and recruiting chalet cooks to work in ski resorts. The School is well recognised and with its contacts in the chalet industry is able to help and advise students with recruitment. Ski companies visit the school to interview students. To date they have 100% success rate at recruiting their students.
