confident in cooking for large groups (you might end up cooking for 15 or 20 people),
and will be better equipped to attain the level of quality expected by your employer.

for example (even when they are in a cake). Cooking for large numbers, often in
a small kitchen, takes some getting used to and a course can just take the edge

Crystal Cookery Course
During the summer we will be running cookery courses specifically designed to prepare
you for the season ahead, even including cooking Christmas Dinner. Based in a complex
of 7 lovely chalets in La Plagne the course starts with an introduction to high
altitude cooking, and demonstrations of knife handling skills and basic food safety.
Our cookery trainers will then take you through some simple cookery techniques that
you will use throughout the week and season to come.
Throughout the course you will be preparing, presenting, trying and testing menus
within the chalet environment. You will be baking and serving afternoon tea and
being given all those tips and hints to make your chalet a perfect base for the
customers to really enjoy their ski holiday.
Our courses are priced at £550 and include your accommodation, all cookery ingredients,
and breakfast, lunch and dinner during the course. Also, if you successfully complete
a full season with crystal we will refund half the cost of the course! If you would

The Old Rectory
If you want to gain the skills necessary to find a job in your gap year, working
as a ski chalet chef, then this course is for you. Our popular Essential Course
is also designed for anyone who is thinking of a career in catering, perhaps running
a pub, hotel or B&B, or maybe you just want to learn how to cook. This two-week
hands on course covers key skills for competent cookery. Starting with basic knife
skills and simple dishes, these busy cookery classes will show you much more than
just the classic methods for stocks, sauces and pastry. New ingredients will be
explored; tips on stylish presentation will be learnt along with guidelines for
balanced menu planning, hints on preparing ahead and good kitchen organisation.
At the end of the course you will have a good range of culinary skills and confidence
to tackle any recipe. The essential course is designed for any enthusiastic person
who wants to immerse themselves in cookery with like minded individuals to widen
their repertoire and improve their skill level. With our small classes of a maximum
