The Old Rectory Cookery School

If you want to gain the skills necessary to find a job in your gap year, working as a ski chalet chef, then this course is for you. Our popular Essential Course is also designed for anyone who is thinking of a career in catering, perhaps running a pub, hotel or B&B, or maybe you just want to learn how to cook. This two-week hands on course covers key skills for competent cookery. Starting with basic knife skills and simple dishes, these busy cookery classes will show you much more than just the classic methods for stocks, sauces and pastry. New ingredients will be explored; tips on stylish presentation will be learnt along with guidelines for balanced menu planning, hints on preparing ahead and good kitchen organisation. At the end of the course you will have a good range of culinary skills and confidence to tackle any recipe. Chalet Cooks is the perfect cookery school for gap year students, couples or those on a career break wanting to work as a chalet host or chef. The courses are based in the ski resort of Chamonix in one of our luxury chalets. The aim of our course is to make sure you are fully prepared for a chalet cooks job for the winter season. In the intensive week we will focus on your understanding and practicing more than a week’s complete menu. We will also cover vegetarian meals, children’s dinners, and other specialist menus. You will be shown the short cuts and top tips for cooking and running a chalet in the Alps. You will learn to cook for large numbers on a tight budget which is another key essential skill when working in a chalet. All this knowledge and practice that you will gain will ensure that when you leave our course you will not only be capable but confident in your abilities to cook for large numbers of demanding guests.
