The benefits of taking a course prior to your season are obvious. You will be more confident in cooking for large groups (you might end up cooking for 15 or 20 people), and will be better equipped to attain the level of quality expected by your employer.

Black Diamond Lodge

Black Diamond Lodge offers our one week residential Chalet Cookery Course in Ste Foy, French Alps. Our course is held in actual chalet kitchens. We believe that chalet cookery and operations training in the Alps provides our students with the skills they need to work hard, play hard and enjoy an unforgettable ski season.

We have designed our week long course to mimic working a winter season, allowing you to fully understand the structure of a typical working day. In addition to cookery, we use the chalet environment to teach you critical chalet operation techniques you will need to work as a successful chalet host or chef. Five full days of cookery and chalet operations training with afternoon free time each day to enjoy Alpine activities including walking, cycling, white water sports or simply relaxing in our spa.

The Abinger Cookery School

Always wanted to be a Chalet Cook? We have just the course for you! Our signature Chalet Cooks Course at The Abinger Cookery School in Surrey is your pathway to the winter or summer season you’ve always dreamed of. Our 5 day Chalet Cooks Course is ideal for school-leavers either wanting to do a ski or summer season, or for those heading off to University and wanting to impress their friends with their new-found cookery skills in the student environment. We also offer a more advanced 10 day Chalet Cooks course for those who want to take their skills in the kitchen to the next level. Our 10 day course will also open up more opportunities when applying for jobs in the Alps.

The Chalet Cooks course is run by a team from the highly regarded gourmet ski company Fish&Pips. Not only will the students be taught by former Times Chalet Chef of the year Vincent Clist, they will be living in an environment where they will be trained to “host” as well as cook, making them perfect candidates for the winter and summer seasons. We have put together an intensive syllabus to give our students a thorough overview of working and cooking in a chalet, incorporating (basic to intermediate cookery training, knife skills, menu planning, sourcing ingredients, budgeting, time management, service, cleaning, time management and life in the Alps in general) Our courses are all hands-on, practical and most of all fun!

The Hive Cookery School

Established by experienced Alpine seasonnaires, The Hive Cookery School runs one and two week courses, training apsiring chalet hosts to be the best in the business. Courses are based in a typical Alpine chalet near Les Arcs, in the French Alps, and run throughout July, August and September.

Each curiculum covers everything you need to know to run a chalet efficiently and confidently, whilst teaching you the essential organisational skills to enable you to maximise your mountain time during your season.
